Spicy Vegetable Stir-Fry

Ingredients:
- 2 medium Carrots, sliced
- 1 medium Beetroot, diced
- 1 Capsicum, chopped
- 2 medium Tomatoes, chopped
- 1 medium Onion, sliced
- 2 Green Chillies, slit
- 2 tablespoons Vegetable Oil
- 1 teaspoon Red Mirchi Powder
- 1 teaspoon Sea Salt
- 1 teaspoon Turmeric
- 1 teaspoon Garam Masala
- 5 Curry Leaves
- 2 tablespoons Coriander, chopped
Kitchen Tools Needed:
- Blender
- Stove Top
- Pressure Cooker
Instructions:
- Heat the vegetable oil in a pressure cooker over medium heat.
- Add the sliced onions and green chillies, sauté until the onions are translucent.
- Stir in the diced beetroot and carrots, cooking for about 2 minutes.
- Add the chopped capsicum and tomatoes, mixing well.
- Sprinkle in the red mirchi powder, turmeric, sea salt, and garam masala, stirring to combine.
- Add the curry leaves and cook for another 5 minutes, stirring occasionally.
- Once the vegetables are tender, remove from heat and garnish with chopped coriander before serving.
