Spicy Vegetable Stir-Fry

                                  Spicy Vegetable Stir-Fry

Ingredients:

  • 2 medium Carrots, sliced
  • 1 medium Beetroot, diced
  • 1 Capsicum, chopped
  • 2 medium Tomatoes, chopped
  • 1 medium Onion, sliced
  • 2 Green Chillies, slit
  • 2 tablespoons Vegetable Oil
  • 1 teaspoon Red Mirchi Powder
  • 1 teaspoon Sea Salt
  • 1 teaspoon Turmeric
  • 1 teaspoon Garam Masala
  • 5 Curry Leaves
  • 2 tablespoons Coriander, chopped

Kitchen Tools Needed:

  • Blender
  • Stove Top
  • Pressure Cooker

Instructions:

  • Heat the vegetable oil in a pressure cooker over medium heat.
  • Add the sliced onions and green chillies, sauté until the onions are translucent.
  • Stir in the diced beetroot and carrots, cooking for about 2 minutes.
  • Add the chopped capsicum and tomatoes, mixing well.
  • Sprinkle in the red mirchi powder, turmeric, sea salt, and garam masala, stirring to combine.
  • Add the curry leaves and cook for another 5 minutes, stirring occasionally.
  • Once the vegetables are tender, remove from heat and garnish with chopped coriander before serving.
