Ingredients:
- 200g sweet potato, diced
- 150g broccoli florets
- 200g firm tofu, cubed
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
- Preheat the oven to 200°C (400°F).
- Toss the diced sweet potato with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
- While the sweet potato is roasting, steam the broccoli florets for about 5-7 minutes until bright green and tender.
- In a pan, heat the remaining tablespoon of olive oil over medium heat. Add the cubed tofu and soy sauce, cooking until the tofu is golden brown on all sides, about 10 minutes.
- Once everything is cooked, assemble the bowl by placing the roasted sweet potato, steamed broccoli, and sautéed tofu together.
- Garnish with fresh parsley and serve warm.
