Ingredients:

  • 200g sweet potato, diced
  • 150g broccoli florets
  • 200g firm tofu, cubed
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Kitchen Tools Needed:

  • Oven
  • Baking sheet
  • Pan
  • Steamer
  • Spatula

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Toss the diced sweet potato with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.
  • While the sweet potato is roasting, steam the broccoli florets for about 5-7 minutes until bright green and tender.
  • In a pan, heat the remaining tablespoon of olive oil over medium heat. Add the cubed tofu and soy sauce, cooking until the tofu is golden brown on all sides, about 10 minutes.
  • Once everything is cooked, assemble the bowl by placing the roasted sweet potato, steamed broccoli, and sautéed tofu together.
  • Garnish with fresh parsley and serve warm.
