Ingredients:
- 500g Grass Fed Chicken
- 200g Cherry Tomatoes
- 1 medium Cucumber
- 3 tbsp Red Wine Vinegar
- 100g Feta Cheese
- 150g Basmati Rice
- 2 Pita breads
- 1 medium Red Onion
- 3 tbsp Tahini
- 200g Tzatziki

Instructions:
- Preheat the oven to 200°C (400°F).
- Cook the basmati rice according to package instructions.
- While the rice is cooking, season the grass-fed chicken with salt, pepper, and 1 tablespoon of red wine vinegar. Place it in the oven and bake for 25-30 minutes until cooked through.
- Chop the cucumber, red onion, and cherry tomatoes into bite-sized pieces. In a bowl, mix them with the remaining red wine vinegar, salt, and pepper to create a fresh salad.
- Once the chicken is done, let it rest for a few minutes before slicing it.
- Warm the pita bread in the air fryer for 3-5 minutes until slightly crispy.
- To assemble the bowl, place a serving of rice at the bottom, add sliced chicken on top, followed by the fresh salad, crumbled feta cheese, a dollop of tahini, and tzatziki on the side.
