Ingredients:

  • 500g Grass Fed Chicken
  • 200g Cherry Tomatoes
  • 1 medium Cucumber
  • 3 tbsp Red Wine Vinegar
  • 100g Feta Cheese
  • 150g Basmati Rice
  • 2 Pita breads
  • 1 medium Red Onion
  • 3 tbsp Tahini
  • 200g Tzatziki

Kitchen Tools Needed:

  • Oven
  • Stove Top
  • Air Fryer

Instructions:

  • Preheat the oven to 200°C (400°F).
  • Cook the basmati rice according to package instructions.
  • While the rice is cooking, season the grass-fed chicken with salt, pepper, and 1 tablespoon of red wine vinegar. Place it in the oven and bake for 25-30 minutes until cooked through.
  • Chop the cucumber, red onion, and cherry tomatoes into bite-sized pieces. In a bowl, mix them with the remaining red wine vinegar, salt, and pepper to create a fresh salad.
  • Once the chicken is done, let it rest for a few minutes before slicing it.
  • Warm the pita bread in the air fryer for 3-5 minutes until slightly crispy.
  • To assemble the bowl, place a serving of rice at the bottom, add sliced chicken on top, followed by the fresh salad, crumbled feta cheese, a dollop of tahini, and tzatziki on the side.
